JAMAICAN JERK CHICKEN FINGERS
A lower fat version than the usual jerk chicken. By eliminating the salt, this becomes quite a healthful recipe.
2 lb boneless chicken breasts, cut into strips or left whole
¼ cup orange juice
¼ cup lime juice
3 T sugar
2 T onion powder
2 T crushed thyme
1 T + 1 t ground red pepper
1 T + 1 t black pepper
1½ T allspice
1 T salt (can be reduced or eliminated if desired)
1½ t nutmeg
1 t ground cloves
Lay strips of chicken in a baking dish and pour juice over top.
Cover and refrigerate for 1 hour.
In a small bowl, combine remaining ingredients. Sprinkle over chicken.
Marinate 1 hour.
Over a medium hot grill, lay out chicken and grill on both sides for about 1 hour or until done.
